I don't know how to reply to all, so I'm just starting a new thread!
I really appreciate all the help you've given us. DH sat down last night and made a tentative itinerary.
We still have few questions though.........
Are we horrible if we don't do any meals with the Characters? They seem so expensive, and if they're out in the parks anyway, will we really be missing anything? (We don't have a meal plan.)
For our itinerary, we were thinking of keeping it very loose. Letting the kids play in the pool the day we arrive, MK all day the first day, Epcot the second, Sea World the third and on the fourth, AK in the morning and a vote between MK and Epcot in the afternoon. We're planning to skip MGM because our kids aren't big on shows in general, they're more doers than watchers. Any advice on this? Also, if we decide to go to shows in the other parks, can we just show up or do we need tickets? Would it be too much to go back to the parks, like mayby MGM for a bit after dinner?
Is there a way for us to get a schedule of parades and fireworks? Those are both big on the girls agenda.
We're renting a van and buying a stroller. (After 4 kids, you think we wouldn't need to buy one......). Any opinions on the Chicco Tuscany or Bebelove umbrella stroller? Regular umbrella strollers don't recline, have sun shades or storage, and they have those short handles. My other stroller is a Baby Jogger, can't bring that!

No you're not horrible for not doing a character meal. Character meals provide you with a calmer atmosphere and no lines to interact with the characters. At the parks you have to go to certain areas and stand in line to see characters, or if you happen by a character stand in line there.
I agree with the doing one park in the morning and one in the evening. We like the extra magic hours at night. What we usally do is go the park that had the magic hours the day before in the mornings, go back to the hotel in the afternoon for a break and maybe a swim in the pool, and then back to the park for the magic hours that night. I'm thinking this year since they are having both morning and evening hours, we do the park that had the morning hours the day before. It cuts down on the crowd a little.
If you wanted to do a character meal for a little less expense, you do a late lunch, it is the same food on the dinner menu, but about half the price. We always do Garden Grill at Epcot. My kids are a little older, 12 and 14 and they love it.

One note about going to the fireworks/parades/shows in other parks, as Sonya said, these do not require "additional" tix but if you are switching parks
