WWYD? Park/cruise..... Lotsa questions!

We will be staying in Orlando for a week this July. We will stay 3 nights at a WDW resort, and 3 nights at my in-laws off-site condo (for free). I'm trying to decide whether to stay on-site at the beginning of the week, or the end.
The EMH parks will play a part in this decision (early only, I don't think late will work w/ my kids...2, 6, 9). At the beginning of the week, there are early EMH at Epcot, MGM, and MK. At the end, it's AK, MK, MGM. So....would you rather have EMH at Epcot or AK, if you had kids the age of mine? (We will have 6-day tickets; I am hoping to talk DH into ParkHoppers).
And, would you rather stay at WDW at the start or end of your stay? At the end of that week, we are going on a 7-night Disney cruise.
If we stayed at WDW Resort at the end of the week, we could take the Disney transfer bus right from the resort to the port; that would be easy, though the buses leave later than we'd like. We would also have a break from my in-laws after staying w/ them for a few days (they would not stay w/ us at resort; they're VERY wonderful, BTW, but I doubt we'll get up real early staying w/ them...we'll have our own car).
If we stayed at off-site at the end of the week, we could see the heck out of the parks in the first few days (given the ease of coming back to our hotel mid-day and then returning to park), and then spend the last few days re-visiting our favorite things from our off-site condo. On Friday, we could have a non-park day and just relax, do laundry, last-minute shopping before cruise, maybe have a day off from the sun. Then on Sat. we'd go to the airport and catch the transfer to the port from there.
An EMH question....on the day you check out of your resort, can you still go to EMH that morning? Do you just have to come back in time to check out, or can you leave your luggage at the desk (or in your car) and then have some kind of auto-checkout happen at official checkout time, and pick up your luggage later? I will check w/ the resorts on this, but thought I'd ask here because some of you are such pros about how best to do things.

Wow, interesting prediciment. Both scenarios have advantages, but before I start rambling, yes you can still use EMH your last day, all your resort benifits are good until midnight the day you check out. You can ask fro express check out when you check in, which means that the
