The last date to book for the free dining option was June 25; it had been extended from the 1st week of June.
I think that $1000 is more than enough to cover your food expenses.
It just really depends on your family, but $1000 sounds like more than enough. (I think my family spent less than half that, but we are on a tight budget). If you guys are staying onsite and plan on eating sit down/table service meals every day then you could upgrade to include the dining plan. Unfortunately, the deadline to get free dining was June 25, but it would cost your family about $100/day (37.99/day/adult and 10.99/day/child) which is still $400 dollars under your budget. You get 1 table service meal, 1 counter service meal, and 1 snack per day per person. You might have to spend a little extra on top of what the dining plan offers (if you buy all your drinks in the park), but I am just guessing on that. My family went in June, but did not get the dining plan. We came out cheaper by not having it because we did not do a long table service meal every day and we have a 2 year old that would not have been included on the plan. We also got supplies at a local grocery store and ate breakfast int he room, more to save time than money, but it was cheaper.You can check out more information on the dining plan at http://www.allearsnet.com/pl/packages06a.htm

As mentioned the last day to book and take advantage of the dining plan for free was June 25. However, if you are staying at a Disney resort and already have purhcased a package you may add the dining plan on for a fee.
My computer freaked out on me earlier, I lost my entire reply (as well as everything else I was multitasking on) – I HATE my ISP at this apartment and we have no choice but to use it. L Well, ok the other choice is no internet. LOL not gonna happen.
I'd also like to add that if you are unsure of where to eat you can see all of the menu's listed on allears.net.
I know you said you didn't want to be too tied down on this your first trip, but if you have some idea of which day you want to be at which park (for instance taking advantage of Extra Magic Hours - EMH and going to whichever park is open earlier/later that day) then you can look at the menu's for the restaurants in that park and choose the one you think your family would like to eat at.
Even at this lateish date, as long as you are fairly flexible with eating times and have maybe a couple of sit down restauarants in mind for each park when you call you should eb able to get at least some of the ressies you want, and hopefully you will get a super helpful CM who can help you out.
I think it is a good idea though to see how you go with making the reservations before you add on the dining plan. IT is a big cost saver if you do at least one sit down meal per day, but not of you are going to do mostly counter service.
