I'm sure you're all confused by that discussion title!! Sorry!!
Here's what I'm asking. We have three kids, 9, 7 and 3. Can we ride daddy + the 9yo and mommy + the 3 & 7 yo kids on rides like Dumbo, Magic Carpet, etc. where there are supposed to be only two riders?
If not, I understand we'll have to do the ride swap, and that's fine. I'm just hoping to have us all ride at the same time.
Any chance of that?

Sometimes...it depends upon how big your kids are, of course. For a long time, it was DH, me, and 3 kids. I am not that big at 4'11" tall....so it was usually not a problem for me to ride with 2 kids. More difficult for my 6'1" husband, but he could sometimes do the same.
When the kids were older, we could ride 2 kids together, mom or dad with the third, and then one parent alone. I'm sure your 9 and 7 year olds could ride together on quite a bit. I am pretty sure rider swap is only for the thrill rides, not for something like Dumbo or Peter Pan. Maybe someone here can prove me wrong!
It does get to be more challenging when the kids outnumber the parents, huh? :)

Like Laurie said, it really depends on the size of everyone involved. Some ride seats are also wider than others. Splash Mountain can fit three across, so can Big Thunder Mtn RR, Dumbo you could do 2, maybe 3, I rode with both of my toddlers on that and Pooh. Peter Pan has room, and you'll likely all sit across one seat on It's a Small World, definately all one seat on Pirates. Astro Orbitor you'd'
I think you & the 3 & 7 year olds would probably fit fine on Dumbo. When Aly was toddler-age (up to 5), we could ride the 2 of us and her together on Dumbo. Magic Carpet, the 7 year old could sit right in front or right behind you...you'll be in the same ride vehicle (or maybe put the 7 y/o with dad and the 9 y/o by himself...OR put the 7 & 9 y/o together..that'll work for a lot of rides where you're still close).
Barnstormer is another one that only fits 2, but the next row of seats are right there. A lot of ride vehicles will be like that.
I've never ridden Astro Orbiter, so that one I'm not sure about, but I can't think of any other ones that would be too separate from each other.
Buzz Lightyear, all 3 of us fit, even when she was 7.
