Weekend itinerary w/ DH and 3 yo DS?

Needless to say, my itinerary is nowhere near as packed as other people's! LOL Since we live in Florida we don't feel the need to "do everything" while we are there. In addition, if I pushed to get too much done, I would end the day with a very cranky DS3, which makes for an unhappy mom. We are spending the weekend at WDW and we are buying the Florida Resident 3-day pass. So these are our plans . . .
Thursday Aug 9
Drive down to WDW in the late afternoon.
Hang out at Downtown Disney
Friday Aug 10 - Magic Kingdom (PM EMH)
Our plan is to concentrate on Fantasyland. Since this is still the "crowded" time of the year, DH says we should just find ourselves a nice air-conditioned restaurant and let DS3 nap in his full-size stroller and not take chances by returning to our room for his nap. Depending on time and DS's mood and energy levels, we hope to ride the Liberty Square Riverboat with the characters, and just let him play around Mickey's Toontown Fair. (Am I correct that Donad's Boat doubles as a splash park?)
Saturday Aug 11 – Animal Kingdom (AM EMH)
We visited AK April 2007 when DS was only 18 months old and mostly concentrated on the animas. This time around, we hope to catch some shows, maybe even have breakfast with Donald. Hopefully, DH will get to ride Everest Expedition b/c the crowds last year were insane! (For the record, we are NOT interested in the P&P Party being held tonight.)
Sun Aug 12 - Epcot (Epcot AM EMH)
We have been to Epcot quite a few times, but it's DH's favorite park so we are going to visit the World Showcase and just play it by ear.

I can't believe I have never seen this fountain at DTD! We went to WDW twice last year and DS loves playing outside the Lego Imagination store, and riding the miniature train and the carousel. The drive is between 3 and 3.5 hrs but he will definitely need to burn some energy or he will never go to bed that night!
I was the one who posted about charactes riding on the Liberty Square Riverboat. From what I have read, it's not a scheduled thing, but we are hoping to get lucky. (Fingers and toes crossed!) Either way, DS will enjoy the Riverboat and it will be a nice break from the heat and the crowds. He just loves riding on any type of vehicle - trains, boats, planes, whatever! I'm actualy bummed that he's too young for the behind-the-scenes tour of the MK Railroad. ):
We went to AK on April 1st last year and the crowds were not only huge from Spring Break but they were having a "sneak peak" of Expedition Everest. (I think it "officially" opened 4/22?) The average lines were 3-4 hours long! This time around we are definitely doing what you suggest - go straigt to the FastPas booth and then enjoy the rest of the park. I'm not sure if DS will want to see any of the shows b/c he's never actually watched a full-length Disney movie (He's more into Mickey's Clubhouse) but I did read a suggestion on AllEars that if you wait until the Lion King starts the crowds at the Meet&Greet will be more manageable for a little guy. I also look forwad to taking him to Dinoland U.S.A., which we skipped the last time. This time around he actually knows what dinosaurs are so he should definitely enjoy.
As for Epcot, we are going mostly for DH and I, but I do think he will still enjoy the little boat ride in the Mexico pavillion (can't remember what it's called) and such. I did see something in all ears that you should head straight to the Meet & Greet while the rest of the AM EMH crowds goes off to get their FastPasses. We'll see how it goes. We might end up back in the Magic Kingdom depending on how much we get do to on Friday.
And last, but not least, thanks for the ADR suggestions. I think that the worst that could happen is that we have to cancel them at the last minute, but at least we have them!
