I'm not a camper..sorry. I've camped once in my life (I was 11) and never wish to again. We have stayed off-site 8 of my 9 trips, and we just stayed on-site for the first time our last trip.
We always bring our own snacks (although a Mickey bar is purchased at least once per trip for Aly), but we've only brought our own sandwiches once. With just 3 of us, it is much easier to just get the food there and not have to haggle with prepping the food. We do often share food, though, since the portions are so large!

My first (longer) welcome got eaten by some nasty old laptop - but I can't name names or it will be mean again. :-)
We LOVE camping, and we LOVE Ft. Wilderness, but I admit we stay in the cabins there. It is quite possibly the nicest camground we have ever been to but the lack of ability to have a personal fire is a huge turn off for my dh, so he won't even consider it.
I have never camped at WDW, though DH and I did camp on a trip to Arizona once before we had kids. We felt kind of silly packing a tent, sleeping bags, etc. in suitcases to fly across the country, but we had a great time...I don't know how it would work to camp at WDW having to fly w/ our 3 kids, but who knows...maybe it would work! I would be concerned about the bugs...is it buggy at the campground? How cool does it get at night in November? I guess I'd also be concerned about rain.
But at this point we still don't have lodging reserved for our trip this November...I've got to get on the stick and do that! Just having a horrible time deciding. If the hotels are full, maybe we'll bring the tent and get a campsite!
As for bringing in food, we bring snacks, especially for our 4-yo, who eats several mini-meals a day. A couple sleeves of crackers, and small containers of PB&J, and lots of cold water.
Glad to hear about your frugality -- since all we do pretty much is sleep in the hotel, and sleep like rocks, at that -- it may as well be in a tent! And since we always wake up early when we camp, it'd be that much easier to get the kids going for early EMH...hmmmm...

You won't get one at FW.
When we do eat at a sit-down at DW, it costs us $200/meal. There is just no way to budget that in very often. I make most of the food at home when we camp, things like breakfast burritoes, sausage gravy, waffles, breakfast meats. We just heat it up for an easy, quick breakfast. Dinners are usually frozen at home, then we put one in the crockpot each morning. We have it all down to a science now.
With the wraps I use, I have to put the front one on 1st. I have to wrap the back one on around DS, then I put the baby in the front. I have never found a carrier that I'm happy with. This is the one that I use..... http://www.wearyourbaby.com/Default.aspx?tabid=180
