I like the mashed cauliflower but it's nothing like potatoes.

Try cooking it in veggie broth & sprinkling Mrs. Dash Table Blend on after.

Something to try w/ mashed taters - cook them, skin on, w/ parsnips, rhutabaga or turnip and when you mash it all mix in veggie broth, minced/crushed garlic, salt & fresh cracked pepper, maybe a little parsley. Increases the fibre and nutrient values as well as the flavour.

You know what else is good - while we're on the subject of root vegetables? Steamed parsnips w/ a good E.V.O.O. (extra virgin olive oil), fresh dill and a pinch of sea salt. As is a roasted melange of onion slices and cubes/slices of carrots, parsnips and potatoes (again I always leave the skin on). Toss the veggies w/ E.V.O.O., salt, pepper, parsley, a splash of cider vinegar & some broth then roast in a non-reactive baking dish.

I started buying cubed/peeled butternut squash. It is SO convenient.

Root vegetables, at least the farther we go north, are going to be healthier choices at this time of year - less distance to travel means they're fresher & less likely to be GM or from somewhere w/ little, if any, regulation on the use of pesticides. Plus, I like to support farmers as close to home as possible, preferably local organic farmers.

We've got tons of sweet potatoes up here, although they mistakenly call them yams. I've never seen a real, honest-to-goodness yam. As a matter of fact I was just thinking yesterday that its time to try out my black bean & sweet potato chili recipe (i ended up making a veggie chili of tomatoes, onion, bell pepper, carrot, corn, kidney beans, black-eyed peas & chickpeas w/ some cajun & chili seasonings). I also make a wicked curry w/ sweet potato and chickpeas and enjoy sweet potatoes 'fries' made by tossing them in EVOO and my homemade cajun seasoning blend, then baking them.

I was at Whole Foods today and they had a variety of yams but no sweet potatoes.

isn't it something like yams only come from africa so any "yams"/"sweet potatos" that are grown in the americas are actually sweet potatos? i think they call them yams anyway to distinguish the orange sweet potatos (which look a lot like yams) from the whitish/yellow sweet potatos (whose insides look a lot like regular white potatos).

there are other foods that are genetically modified, tomatos for one thing and i think potatos, which is a root vegetable. i doubt stuff like turnips though.
