One way to mash califlower.

Melissa, I am not sure if this is what you might be looking for but I tried these and they were outstanding.



RANCH MASHED POTATOES


6 servings, 1/2 cup each


2 medium potatoes
1 cup bite-sized cauliflower florets
1/4 cup Kraft light done right Ranch reduced fat Dressing


PLACE potatoes and cauliflower in large saucepan. Add enough water to cmpletely cover vegetables. Bring to boil on medium high heat. Reduce heat to medium low; simmer 20 minutes or until vegetables are tender.


DRAIN vegetable mixture, leaving vegetable mixture in pan. Add dressing; mash until vegetable mixture is light and fluffy.


For best results, cut potatoes and cauliflower into equal-sized pieces to ensure even cooking.

They are super yummy. I made them last weekend when I was in KS, even Mr. Man liked them and he is a die hard mashed tater fan.

I'm making shepherd's pie for dinner tonight and it calls for smashed cauliflower. I'm going to try these variations to give it a boost!
