It's kinda late in the day for posting this but what the hey.
Three classe today: Mindful Movement; weight training; & kickboxing
Breakfast: Triple Berry Oatmeal Crisp w/ van. Silk; hot lemon water; jasmine-green tea
Lunch: Instant black bean soup; nectarine
Supper: big salad w/ lots of different veggies either topped w/ some nuts or sunflower seeds or w/ a couple falafel on the side
Snacks: dark choc. w/ almonds; bruschetta on ww pita; carrots w/ red pepper hummus; chili-lime tortilla chips w/ fresh salsa; fresh fruit; herbal tea
To me it was always looks like I'm such a glutton next to you folks, but I know I need all the cal. I can get w/ my schedule. Life is a never ending cycle of eat-sleep-work.
When I get certified as a Nutrition & Wellness Specialist I'm giving serious consideration to a number of business ventures. (I wouldn't do all of them, just one, but I haven't narrowed my choices yet.) There just aren't enough options out there for vegans when it comes to places to eat/buy food (especially if taste AND quality are equally important in your choices) & I feel I should make an effort to change that. I was also reading a quote by some health or fitness pro recently about doing what you know and representing your beliefs - so i was thinking that, although i don't want to narrow the scope of my business by eliminating meat eaters as clients, I should promote myself as specializing in fitness & nutrition for vegetarians & vegans. Also my 'wellness' oriented classes (ie. - Mindful Movement) are so well recieved I've been asked to expand on them (but I'm only one person). So, I might be wise to ally myself w/ a reputable holistic health practioner, like a naturopathic Dr. or herbalist. I'd like to offer full service lifestyle consultations. I'm also ready to start writing seriously so I'm thinking that articles on introducing vegetarianism inot the average meat eaters diet & ones on nutrition/diet for the vegetarian/vegan athlete/fitness enthusiast would be a good niche to target.
If I didn't hate cleaning up after cooking I'd try my hand at making vegan 'ready to serve' products, like baked goods, for regular grocers & restaurants to offer.
So many ideas, so little time. Speaking of which I'd better make my guys some supper & get ready for work.
