The "best" way is whatever works for you. Working 2x a week is fine... just make sure you aren't breezing through your workouts.
I recently switched from total body 2x a week to a 3 day split so I actually lift 6 days a week. I did this to see if it would make a difference as far as muscle growth and weight loss. Jury's still out. :)
The Sprint circuit is a good circuit, albeit a little basic. (I personally would get bored with it pretty easily but that's just me.) When you're ready to move on, I'd definitely hire a trainer for a session or two to show you different exercises with the cables. Cables are so versatile.
Sounds like your sets are going great. If you're close to failing on the last rep, I think that sounds good. :)
I'd probably do what the trainer suggested. Move the weight up and when you fail, drop down to the lower weight to finish the set. Personally, if I can hit 8 clean reps, then I'll just stop there and not worry about finishing the remaining 4.

We have the Sprint circuit at my gym. :) It's a good little circuit and it's pretty tough to do it wrong.
The cables (or pulleys) are lots of fun and there are a million things you can do with them.
Well you're a professional so I'm sure you're really doing things the way that they should be done.
