I sub a class like that sometimes..and I find that the participants like when I have done basic step with intervals of high intensity moves, like lunges and straddling with squats.

Do you have Bosus available for that class? I've seen instructors do basic two-feet jumps from floor to bosu back to floor.
Another fun activity is lining steps next to each other horizontally, and then running through them doing figure-8s, touching the outside corner of the steps.
Once I did a class where we jumped over the steps. (I think they were on 3 risers.) They were set up like hurdles but we jumped them with both feet instead of hurdling them.
Another exercise with the step is turning them vertically and standing on top. Step down with the right, step down with the left (so that you're strattling the step) and then jump both feet on top together. right-left-UP-pause, right-left-up-pause.
You always have suicides.
We also did an exercise that I used to do in basketball practice. You squat in a defensive position, stutter stepping until the instructor blows the whistle. Whenever the whistle blows you have to jump (is that plyometrics?) and then go right back into the stuttering move while in a squat. Get it?

I have to ask about using the BOSUs. I'm sure it won't be a problem if I use them for lifting and squats but since they have a class that's pay I'm not sure about using them as bigger part of class.
