I took today off... nice to have an extended weekend! DH and I got up to run this a.m. and we did 4 miles. He hasn't run with me in a while because he was still recovering from his trip but he certainly helped me knock a few minutes off my 4 mile time. I was impressed with how well we did although it took quite some time for my HR to come down. I have an appointment with an allergist today and am going to have to return some movies and run to the grocery store. Otherwise, we'll just spend one more day relaxing and hanging out. It's been a really nice couple of days. I've been getting sleep and that certainly does wonders for my mood.

Breakfast: OJ, peanut butter banana toast

Snack: cantaloupe (or as I recently learned on the food network, it's actually musk melon because real cantaloupe isn't available in the US), string cheese

Lunch: black bean and tofu burrito, broccoli, protein pudding

Snack: ?

Dinner: lasagna, salad, ?

That's news to me on the cantaloupe thing...at any rate, I still hate it! lol

Breakfast: bagel sammich, virgin Caesar w/celery sticks
Lunch: Alpine Lace & fat free chicken roll up, butternut squash soup, WW saltines
Snack: frozen grapes, coffee with milk & Splenda
Dinner: something with shrimp

Gonna teach piano tonight and then step.

Had/have 2 weight training classes today, otherwise just running errands; preparing little 'session wrap-up' gifts for my participants & working on trying to figure out how to schedule all the places I work over the summer, so there's no conflicts and still have time off.

Breakfast: oatmeal w/ berries & van. Silk; green tea

Lunch: seaweed-tofu soup; veggie spring roll (burnt my tongue it was so fresh); jasmine tea

Supper: veggie dumplings; kung pao gluten; veggie spring roll (We have this incredible asian restaurant that happens to be vegetarian, so since I was nearby today I stopped to have lunch & pick up take out. I'm going to be a sneak and just leave a note that the take out is for dinner, but not tell DH its from the veg. place. I think he'll love the gluten if he tries it, but he won't try if he know what it is.)

Snacks: fruit smoothie; brown rice chips; soy chai latte

Amending food journal...

Lunch: had mini-wheats w/milk instead of protein pudding

Snack: protein pudding with sprinkled pecans on top

Dinner: salad, lasagna, fallen mint souffle

Awww, I have never figured out how to make a souffle either - I've read so many different recipes and no 2 ever seem to be similar in the method. Last year my then-bf and I tried to make a cheese souffle but it came out like a crumbly pie.

I ate very bizarre-ly this weekend, as I was dogsitting for my best friend, and spending most of the days, and all of the evening/nights at her place. (The dog gets scared at night- she's a Boston terrier- not my kind of dog, but still tolerable- I like my dogs on the large side) My friend bought me some food, so I basically grazed off of that (luckily, it was all healthy), and then caved and bought Baja Fresh one night. However- I did take the dog on a long walk on Friday, walked all the way to Georgetown and back Saturday morning, and went and did weights on Sunday morning. So I guess it wasn't a total wash.
