it does involve some heat in cooking, but one of my favorite things for hot days is pasta tossed with chopped raw tomatos (especially good with fancy yellow and red grape tomatos) and chopped fresh basil. add olive oil if you want, but it's optional. it comes out kind of lukewarm once you toss up the pasta. i used to eat this with queso fresco, now i just leave off the cheese, but i bet it would taste good to toss in a little crumbled firm tofu that has been tossed in nutritional yeast.
also, if you don't want to eat pasta, you can toss the tomatos and basil with (rinsed, drained canned) white beans instead.
