yay, independence! i actually went for a run this morning - it's a lot nicer
I did pilates this morning, and this afternoon I am doing laundry.
Breakfast: 2 slices PB toast w/bananas
Lunch: Vietnamese vermicelli. Gonna try to make it at home.
Dinner: wintermelon soup, it also has bits of cubed pork tenderloin, carrots, shrimp, dried mushrooms, and dried scallops
I'm still not in much shape to go anywhere so we'll be at home this evening. There's a fireworks display a few miles down the road we may walk down to the driveway to see if we can see part of it.
DH picked up a short contract job so he'll be working on that all day. I suppose I'll be doing my usual... keeping an eye on the TV, reading, maybe working on my CEC's if I feel up to it.
We had some visitors this weekend and that was nice. Contact with the outside world is a good thing and I'm starting a nice collection of flowers. :) Still don't have much of an appetite but I seem to be eating a little more every day.
Hope you all have a great holiday!
God Bless America....
I had a very busy week so I'm spending today relaxing.
Jean,
I actually undercooked it. You're probably thinking of the very very thin Chinese kind of vermicelli - this is approximately the thickness of spaghetti. The directions on the package said soak in cold water for an hour and then boil for 10-12 minutes. After about 5 minutes I checked and they looked very floppy so I took them out and drained, but when I ate them, the middle of the noodles were still VERY chewy.

edited: Jean, note that I was too lazy to pull the strings off the bean sprouts ;)
