I don't actively hate these foods, but would prefer their unhealthy relations: brown rice, whole wheat bread/flour/pasta, that vegetable oil spread that is supposed to be like butter, lowfat dairy products, fake vegetarian versions of bacon, sausage, chicken, and deli meats.

I don't eat anything I dislike! There are a lot that I don't like (cooked seafood except shrimp, and beans except green). I think most healthy food I don't enjoy :P I still can't get over my aversion to broccoli, cabbage, and some other veggies. It is so weird not eating food that I usually love.

I would really like to try roasting beets in the oven but
1) I don't know how to prepare them
2) I'm afraid of turning the kitchen fuchsia :(

Yeah, I was going to try them but didn't want to turn everything red.

no, you should try drinking fresh carrot juice or eating fresh beets. try going to a juice bar and getting carrot juice, it will give you a taste of what i don't like about beets without all the mess of cooking beets. they both have a totally different kind of sweetness than when you ADD sugar (or maple syrup or whatever) to a vegetable. it's a particular, weird kind of vegetably sweetness that i find gross. and its completely different than the hint of starchy sweetness in sweet potatos.

i like carrots, sweet potatos, etc. cooked in brown sugar or maple syrup too.
