Wow, I have to disagree! Kickboxing aerobics is pretty much useless as a selfdefense tool, but standing martial-arts is a perfect way to learn to defend yourself. You learn to escape or avoid before the attacker takes you down.
I had a kickboxing teacher (who also did karate) say the best thing about cardio kickboxing as self defense is that it makes your legs strong so you can run away.
Well in that case the treadmill is a good way to learn selfdefense :P The problem with aerobic martialarts is that you don't learn proper technique and application. Sure I tell my students when I teach aerobics what they are doing, but I can't show them how to actually apply it and when is the right time. Now, aerobics is a good way to supplement self-defense because you develop those muscles to kick, punch, and strike.
Wow, that's a tough situation. Your duty is to the majority of the class, but when she's just trying to have fun and is oblivious to the effect she's having its almost a no-win situation. Plus you can't help (at least I couldn't) wondering if the other participants are judging you on how you deal w/ it. It's a tough call and I think you handled it pretty well. Lucky for you that particpant saved you from having to give her the boot, as if she continued on the way she was you would've had to ask her to leave.
Speaking of noisy distracting participants - have I told you about the one I have that repeats EVERYTHING I say, including any sounds I make, loud enough for the entire class (it's a a fair sized class w/ 20+ people in a big room) to hear AND counts EVERYTHING down, just as loudly AND hoots occasionally. She's a perfectly normal grown woman, and very nice, but she drives me insane sometimes (on the plus side I've really refined my cueing as a result :-p). However, its clear that she's just having fun, she appears to annoy only a few others mildly, most seem amused or will even hoot and countdown occasionally w/ her.
We get all kinds Jean. Its part of the job, unfortunately they don't, as you mentioned, put anything in the manuals about dealing w/ situations like yours. make sure you talk to her mom or even your director so you can ensure she can continue to join the classes, but will hopefully behave in a more appropriate manner.

Sounds like she has some sort of mental disability and I think you handled it correctly.
She was very polite when she asked her to leave.

Meal 3: Had the pizza sandwich for lunch w/ added onions & peppers.
Supper: changed my mind, will more likely have either kungpao or chili-garlic noodles w/ szechuan marinated tofu and a V-8
