Who's off today? This is the biggest pain of teaching on a Monday--even when everyone else if off, I have to work (listen to me whine when I only work 2 hours a week...).

I'd probably reduce the amount of butter and do a mix of olive oil and butter...and evaporated skim milk. Thanks for the recipe!

I don't use a recipe but a bechamel sauce is just a white sauce:

To make it healthier, you can use olive oil and low fat milk, not quite the same. You layer it where you'd use ricotta.

my favorite lasagna doesn't use ricotta at all but bechamel sauce.


Please share the recipe! I might try it for next time. I used to love this lasagna but it's ridiculously high in fat and calories that I can't eat it anymore. I loved it because it had no tomato sauce...

You can use straight ricotta but it's harder and I like the softness, more custardy (though it's not custardy) consistency with eggs, especially if you're using low fat ricotta.

I haven't tried it but have been told that eggplant in a waffle maker or panini grill is amazing.

The government made up Family Day last fall, a couple of other provinces have the holiday already and they felt we deserve a long weekend in this dreary stretch between New Years and Easter. :)

I bought fresh WW lasagna sheets. I also have the ricotta...can you elaborate on why you need to mix with eggs? can I just layer sauce, noodles, veggies, ricotta?
