HI all, I am at a loss as to what to make for dinner every day so I thought we could all post our favorite healthy reicpes here(maybe inspire me lol!) I'll go first


Home made chicken burgers


4 bonless skinless chicken breasts


1tsp garlic salt( or salt free garlic seasoning)


1tbsp bbq chicken sesaoning( I get this in my spice aisle at the regular grocery store)


1 tsp pepper( 4 or 5 grinds on the pepper mill)


1 egg


5-8 low fat baked crackers (any plain kind will due)


tbsp parmasan


1 tbs melted butter/marg


basically i chunk up the half thawed chicken(it is easier to work with if it is still slightly frozen) and throw every thing into the food processor. You need the butter so that they don't stick to the grill. I grind it all up in the processor, make it into patties and put them on wax paper on a baking sheet and put the pre made patties back into the fridge for about an hour to set up. you might want to slightly grease your grill to because there is not much fat in the chicken they can stick sometimes. I add a whole wheat bun, mustard, lettuce, tiny bit of miracle whip and a slice of fat free cheese. MMMM tastes of summer. Hope you like them!

New recipes are always a big help.
With a vegetarian mother in law, I try to keep a few recipes for things she'd eat. This one is a hit with meat eaters too.

Mushroom fajitas
3 portabella mushroom caps
2 red bell pepper
2 green bell pepper
1 medium onion
3 jalapenos

Slice the first four ingredients about 1 inch wide. Slice the jalapenos about matchstick width (for hotter fajitas, leave your jalapeno seeds, for milder fajitas slice the jalapenos seperately and rinse them)
Put 2 tbs of olive oil in a non-stick skillet, warm to medium heat and add all veggies.
Cook to desired tenderness, season with salt and pepper or fajita seasoning.
Add the juice of one lime if desired.

Serve with guacomole and carrots for dipping.

Makes three servings 239 calories per serving, Guac 180 per 1/3 cup, carrots 30 per serving.

I serve with optional cheese and tortilla, but us counters should avoid them. :)

I made a great new recipe last night, and I don't have it in front of me, but hopefully I can remember it. Sorry if the measurements are off, I'm trying to ballpark it! :) Even DH loved it, and he usually hates anything 'healthy'.

Stuffed Portabellas

1/2 lb ground turkey
1/4 onion, chopped
1/2 can diced tomatoes
1 Tbsp neufatchel cheese (or cream cheese)
Parmesean cheese (maybe 3 Tbsp or so?)
garlic powder, salt, pepper, italian seasoning to taste
2 Tbsp bread crumbs (seasoned or plain)
Two portabella mushroom caps (4-5" diameter)

Brown ground turkey in skillet until no longer pink, add onion and saute until onion is soft. Add tomatoes, cheeses, and seasonings and mix until cheese is melted. Spray baking dish with non-stick spray and place mushrooms on dish. Spoon turkey mixture into mushroom caps. Sprinkle bread crumbs over turkey mixture, then bake at 350 for 20 minutes or until bread crumbs are slightly browned.

This serves two, so you can double it for a family (and use up the whole can of tomatoes!). From what I remember, it's about 240 calories per serving (per mushroom - but they are big!).
