So I just dug out a crockpot that my mom bought me a few years ago. I love the idea of just throwing things in and not worrying about it until its time to eat. Anyone have any good ones to share?

beef roast, italian seasoning, half drained jar of pepper rings & a jar or 2 of cocktail onions-not the gross mushy dutch ones. cook all day, shred & serve with crusty bread to dip in the tangy juice or as sandwiches.

Pot roast is my fav. I like going down the spice aisle and pick out McCormic packets for crock pot meals.

I just made a very yummy roast the other day in the crock pot...and then forgot to put the left overs in the fridge and wanted to shoot myself, lol. Anyway, here's how I did it:
1) Season roast on both sides with salt, pepper, onion powder, and garlic powder. Sear on all sides, including sides. Place in bottom of crock pot.
2) Add one small container/box of beef stock and some water (the amount will depend on the size of your crock pot).
3) Add whatever vegetables you would like. I put in potatoes (peeled and quartered), one bag of baby carrots, a few onions cut into wedges (keep the wedges as together as you can), cabbage wedges, and small mushrooms. I also added three bay leaves. Also, I put the veggies in the crock pot in the order I listed them, that way the stuff on top (cabbage and mushrooms) more get steamed instead of sitting in the broth the whole time.
4) Cook on high for 4-6 hours, or until veggies are tender and meat is cooked.

This was the first time I had actually made this on my own (usually have my mom helping, lol) and oh my! was it ever good! I'm actually thinking of going back to the store to get more ingredients to make it tomorrow since I had to throw it all out :(

We made this one the other day and my DH keeps asking when we are having it again! I served with mashed potatoes and asparagus, this is heavenly!

Dark Beer and Black Pepper Braised Short Ribs
Serves 3/4


•When slow cooking, always use meats that have some fat or will be a dry disaster.
•Always brown the meat first to seal the juice in. This caramelization is key to making flavor-packed short ribs!
•Don’t place cold meat in the slow cooker, use it to keep food warm.
•Dark beer and cracked pepper bring out the caramels and deep flavors in short ribs.
•Reducing beef stock helps concentrate the flavors in your slow cooker. A little goes a long way.


1.5 pounds boneless beef short ribs
1 tsp. kosher salt
2 tsp. ground black pepper
1 cup all-purpose flour
2 Tbsp. extra virgin olive oil
1 Tbsp. butter
2 ea. onions, sliced
5 ea. garlic cloves, smashed with a knife
6 fl. oz (about ½ of one bottle or can) stout beer
1 quart beef stock
1 sprig rosemary


Reduce the quart of beef stock to one cup in a shallow sauce pan or deep sauté pan and set aside.
Season the short ribs with salt and pepper, and then dredge in flour until well coated.
Heat the olive oil in a Dutch oven over medium-high heat.
Cook the dredged ribs until browned on each side, about 5 minutes per side.
When browned on both sides, remove the ribs from the skillet and set aside. Reserve pan drippings for later.
To a slow cooker, add the onion as a bed, then add seared short ribs. Add as well any juice or drippings reserved from the pan.
Cover the ribs with smashed garlic cloves, fresh herbs, butter, salt and fresh cracked pepper.
Add the stout beer and reduced beef stock.
Place the lid on the slow cooker and set to high.
Cook for approximately 6 hours or until tender.
Top short ribs with sauce made from cooking them.
