One of my big items I want to get done in the next couple weeks is to freeze some meals for the coming months.

I borrowed a couple freezer friendly books from a friend. Today, I am lemon chicken breasts. We are going to eat one meal tonight and freezing 2 for later. Tomorrow, I am making meatballs - eating one serving for dinner and freezing 2 serving. On Thursday, I am making a french steak (1 for dinner and freezing 2) and Friday, I am going to make cheesy chicken bundles for dinner and freezing 2 servings. Hopefully, by the end of the week, I will have 8 meals in the freezer ready to go and it won't be that much extra work.

My husband makes really yummy spaghetti sauce but I have never thought about having him make extra and freezing it. That is a great idea. I will have him do that next time. Lasagna cupcakes sound fun! If you try it, let me know how it turns out.

I've never frozen a meal before. It's a good idea! How long do meals last in a freezer?

It depends on what you are freezing but usually around 3 months. Uncooked meat stays good longer and if you have a deep freezer, it lasts even longer. But it really does depend on what you are freezing. I think cooked chicken lasts 4 months. I will have to pull out my book and see what it says.
