Advice for dropping to 2 pumps/day

I just hit the 11 month mark a couple of days ago. I can't believe how the time has been both so long and so quick! Anyway, I have been pumping 3 times a day since April. My goal is a year. Now that the end is in sight, I'm trying to drop my lunchtime session. I'm not trying to wean just yet, but have enough freezer stash that I can take a pretty significant production hit and still make it to a year or longer. I'm going to see how my son takes to cows milk before pulling the plug (literally!) for good. He's a 33-week preemie, but our ped thinks he'll be OK to make the switch at one-year actual age.
I'm looking for advice from any of you ladies who has dropped to two pumps. So far, I've been fine dropping sessions cold turkey, even going from 4 to 3. But this is just too long to go. Right now, my strategy is to slowly decrease the time of my third session. I normally pump 40 mins (to reach that 120 mins/day mark), but yesterday I noticed that I was empty after 25 minutes, so I stopped. I'm going to see how I do today at 25 minutes and might use that as my baseline to decrease a couple minutes every other day.
I've also read that it might help to start shifting that noon session later every couple of days, until it merges with the evening pump.
So, what do you all think? Any been-there-done-that advice to pass along?
