So I know I'm only 4 weeks pp and already considering giving up this whole pumping nonsense, but even though I'm losing my mind most days I just can't bring myself to stop pumping yet.

In my opinion, it's better to give some bm every day for as long as possible. Breastmilk contains all sorts of antibodies (a percentage of which go away when it is frozen, but some stay) so if I were you, I"d stretch out the stash so baby can get some antibodies every day. I know what you mean about feeling like you're losing your mind. Before you quit, if you are going to have to supplement with formula anyway, could you save your sanity by reducing your number of pumps? Just an idea--sanity is important! Good luck with whatever you choose!

Great job so far! As you're planning your stash, remember that in a regular freezer BM is good 3-4 months, and 6-12 in chest freezer. You might have already known that, but I thought I'd mention it since you're planning on doing some long-term freezing. Setting small and manageable goals is the way to go!
