A few of my recipes were requested in the DYK thread, so here they are:

Chicken and Rice

2 cups long-grain white rice

2.5 cups chicken broth

1/2 cup dry sherry

1 tbsp chopped fresh thyme

2 tbsp extra virgin olive oil

8 bone-in chicken thighs

salt and pepper

1/2 lbs mushrooms, trimmed and sliced

1 onion, diced

3 cloves garlic, minced

2 cups frozen peas (I don't like peas so I leave these out)

Flank Steak

Marinade:

1/4 cup low sodium soy sauce

2 tsp honey

2 tsp grated peeled gingerroot or 1 tsp ground ginger

2 tsp finely chopped fresh lemongrass or grated lemon zest

2 cloves garlic, minced

1 tbsp dry sherry

a pinch of crushed red pepper flakes

1. Combine all marinade ingredients in a gallon ziploc and add the steak.

Sausage and Peppers

Brown 12-16 oz sweet Italian sausage (I usually use turkey sausage) over medium heat.

They were a hit! I didn't cut them up because I bought Johnsonville has raw, individual ones, if that makes sense. Do you ever cook brats? We boil them in beer and onions first, then brown a little on the stove or grill.
