I made this and my family loved it.  It's filling, and pretty good for you!  Best of all it's easy and can be cooking while you are at work.  Cook it in a large slow cooker.  To cut a few calories out, use Lite Ricotta Cheese.

Slow Cooker Lasagna Soup
Serves 8
1 pound of ground beef browned (or you can use 1 pound of Italian Sausage links cut into bite size pieces)
2 large onions diced
5 cloves of garlic, minced (I only used 4 and it was pretty good)
1 tablespoon dried oregano
1- 6 ounce can of tomato paste
1-28 ounce can Fire roasted tomatoes (If you don't have them use a can of crushed tomatoes or Tomato Puree)
2 bay leaves
6 cups chicken broth
10 ounces of curly pasta (fusilli ) Store didn't have it so I got Mafalda
Salt and papper to taste
Ricotta cheese
Mozzarella Cheese for topping
1. In a large slow cooker combine all ingredients except the pasta and the cheese. Cook on low for 8 - 9 hours or on high for 4 - 6 hours.
2. In the last 30 minutes of cooking add the pasta.
3. In the last few minutes of cooking stir in half of a a small container of ricotta cheese,
4. put in bowls and top with mozzarella cheese and serve.
