Similar to my veggie soup. I add cabbage too though and no corn. Minestone generally has Italian sausage in it, so I only make veggie soup while on this darned diet. Later on, though, I may make some and add Archer Farms Chicken Italian Sausage to it for minestrone. Thanks for posting your recipe.

I don't like sausage so none in mine,
Actually mine did not turn out well this time which is unusual for me.

Anyways .. see all the healthy foods I am eating with my soup <wink>
Thanks for taking a look :)

OIC! That would make a difference. I use canned green beans, corn, peas and crushed tomatoes. I don't care for frozen green beans or frozen peas.

Isn't that funny how we differ like that,
We always use frozen veggies but I wanted to be *frugal*
I find the corn still crunchy after cooking all day ..I don't like it soggy but I can taste *can* when I have the green beans ;)
