This one is really YUMMO & so simple to make!
I made this
Simple crock pot soups:
Buy some stew beef (or cut your own beef into cubes), turkey, or chicken, cook and cut into pieces or hand-shred.
Make or buy some beef or chicken stock (I personally use Herb-Ox Bouillon because it's gluten-free for my DD and myself)
Add about 4-8 cups of stock to your crock pot (depending on how many you're serving and how many left-overs you want).
Either buy some mixtures of veggies to cut up (carrots, celery, potatoes, corn, peas, etc) or buy a bag of mixed veggies to put into your soup.
Put all ingredients into your crock pot on low for 6-8 hours. Season to taste (can use salt, pepper, garlic, onion, etc).
I will often cook up some rice in a separate pan right before I'm ready to serve my soup. I add the cooked rice to my soup and then serve.
Sometimes we like to have pasta in our soup instead of rice and I'll cook up (again, separately right before I'm ready to serve the soup) some soup pasta (tagliatelle, ditalini, annelini, stars, whatever). Be sure that if you use pasta in your soup, that you remove any left-overs from the heat after serving because otherwise the pasta will continue to cook and get mushy.
