i'm tired of the same ole cottage cheese or sandwich and need ideas. so, i thought i would ask ya'll and then i might find something great when i go shopping tomorrow.

what do you usually have??????

I pack lunches for both DH and I every morning.

For myself, I pack: sliced tomato, cherry tomatoes or cucumber (whichever we have in the garden), cottage cheese, yogurt or granola bar, banana and two pieces of fruit for afternoon snack.

DH gets: salad (lettuce, sliced tomato, sliced cucumber, sliced pepper, dressing), two pieces of fruit (cut up or he won't eat them ~eye roll~), granola bar, banana

In the fall, when fresh produce is less available/affordable, I'm thinking of switching to a pita/egg salad sandwich for myself. I know from experience that switching from home-grown tomatoes back to store-bought is awful.

OMG Ellen I just fixed the bestest thing for lunch. It was a recipe of The Pioneer Womans..yummy...

here is the link to it..we ate it wihtout the bun and no mushrooms..I hate mushrooms. And I used cooking wine not cooking sherry because that is what I had.

If you have never been to this ladies web site you are missing something. I got started on it because of her basset hound Charlie..he is adorable. LOL

Although often I will have soup like today & right now, LOL

My ideal game plan is leftovers but we don't always have leftovers. Last weekend I had a cranberry/Thanksgiving craving so I had turkey cranberry sandwiches for a few days. Now I want dressing since I typed Thanksgiving! Darn.

If there is a certain meal that you particularly like, you could make a big batch to last you all week.

Lunch is difficult for me as well. I usually can't go home to fix my lunch and I don't want to spend money eating out every day either. I've tried to make a big batch of one thing but then by the time lunch comes around, it does not sound good and it's just icky. I only try to eat in our cafeteria once a week if their special is chicken parm but I don't make it a habit to eat there anymore (I will be today because I do not have time to go anywhere and I did not have time to put my leftovers in a reasonable container).

I have a habit of going through phases. I had a spinach salad earlier this year at a wedding and loved it so much I recreated it when we went home and I had it every day for weeks. Sometimes I added chicken for some protein.

Sometimes a fried egg over mozz slice on wheat bread.
one time i tried sliced tomatoes with mozz slices.
one other day canned chicken with garbanzo beans.

i know what you mean rose ann, there is nothing like a fresh tomato from the garden.

i have not been boiling eggs because we have our own chickens and the shells are so thin that when i peel them i take most of the egg with it. but, i bought those new eggies, where you crack the egg in it and then boil it. i have to try them out one of these days.

sunny,

when i make a big batch of something we usually eat it for supper for several nights. if there is just a little left than morris takes it for his lunch.

i did salads earlier in the year and got really burned out on them.

oh the chicken parm sounds wonderful!!!

tomato and mozz sounds wonderful, aileen.

i'm not really big on garbanzo beans, however i will eat hummus once in awhile. which reminds me i have not gotten it lately and will look for it tomorrow.
