I made chicken stir fry with veggies (sugarspap peas, carrots, onions and shroomies) and brown rice.

i'm prolly having Tombstone frozen pizzas today! the kitchen is a mess and i dont feel like cleaning it, and i need it to be clean to make dinner.....

I made steak, baked potatoes and corn for dinner.


I had a small piece of steak, a baked potatoe with salsa on it, and corn.

I'm making the "chix, stuffing, peas thingy"... that's what it's called on my menu.


Box of stuffing, mix with water like the directions say, put in bottom of baking dish, place chix breasts on top, then mix cream of chix soup, milk, and peas.... pour that over the breasts.

We had chicken, broccolli and pasta with alfredo sauce.


Last night was Maritza's enchiladas. Tomorrow will be the leftover enchiladas.


Jen -- You are doing so awesome with all your food changes. Good idea having salsa on your baked potato.

Naomi gave me the idea of salsa on the baked potatoes. And every night I've been adding in a veggie. The past two nights we've had corn though...can't wait to see Caitlyn's diapers..lol

Jen, you are doing a GREAT job!

Just a note on the corn though. Yes, it is a veggie, and a good one, but keep in mind that it is really a starch. At this point it might not be something you need to watch out for, but as you loose, and need to cut back more, you might have to be careful about too much corn. Comparing corn to broccoli, I would choose something like broccoli when it comes to calories/carbs/sugar, etc.
