I ended up having BBQ chicken and garlic & herb roasted potatoes.
We have a sandwhich maker. It's like the pudgy pie irons for cooking over a fire, but it's an appliance. We use two pieces of bread and then whatever fillings we want. The maker seals the two pieces of bread together around the edges.
That is what we had tonight. It was yummy, even if not too healthy. :)
The roasted potatoes and salad sounds great.
Last night we had tallapia in a mushroom and onion sauce, a baked sweet potato, and mixed veggies. It was really good.
My dh brought home some fresh mahi-mahi from his trip...he caught it yesterday morning.
