We love to do character breakfasts before the park opens! It's so neat to walk through a nearly empty park, you can take pics on your way to the restaurant, etc. When you are finished, you can go back outside of course, and they will hold you at a rope. You won't have to leave the park, but you can't do any attractions either; you can be closer to the attractions that the people at the park entrance though, you'll get there before most of them.
As far as if certain parks will be only 1/2 day or longer, it really depends on what you want to do and see. There is no way you'll be able to do everything on one trip, unless it's a unusually long trip, like a month or something, and I don't know if you could do it all then, but I'd like to try! The length of the attraction will affect how long it takes. We saw Beauty and the Beast at MGM last week, and it took an hour or so; we were in line to get into the theater 1/2 hour before it started, and it was about 1/2 hour show. Others aren't nearly as long. Use fastpass for the major attractions, and arrive at or a little before park opening for sure; you will get much more done early before the masses arrive. Not that it won't be busy at opening, but a lot of people don't want to get up early on vacation. You're going at a busy time, and you will probably see long waits for things. I would make a list of what things are must do-s, and make sure you do those first. Then the things you'd like to do, but your trip won't be ruined if you don't do them, and the the things that you don't care one way or another about. Allearsnet.com has details on everything that is at each park. Remember to stop and just soak in the atmosphere at each park too.

I haven't read the other responses, so this may be redundant.
I can't answer your breakfast question, but I can say that AK can be done in less than one day. We've never spent an entire day there. Granted, none of us are the outdoorsy, ecology type either, so that might play a part. There are a few things that we love there, with the Lion King show being one of them, but hands down, the AK is our LEAST favorite of the four parks.
As for MGM, we have spent an entire day there and we really enjoy it. We probably wouldn't go there 2x on a trip though. Once is usually enough. My boys are Star Wars freaks, so we do that for sure, as well as the Indy show, the Muppets, Fantasmic at night, and of course, RNR and TOT for dh and I!! We used to LOVE the Millionaire show, so sorry that it's gone!! We actually like most of the attractions that park has to offer!
I'm not sure how Spring Break will play out in your timetable. We've never been during extremely busy times, so I have nothing to base crowds on. I'd say though, that if you are at the AK before opening, which you will be, you should be able to knock alot of the park out (head straight to Everest, and then move on) without much of a wait!

I also didn't mention Epcot in my previous post, but my kids also love it (they are 11 and 7). They've loved it since their first trips (both at the age of 3). We spend alot of time in Epcot. We spend one full day in the front of the park, and one full day in the World Showcase. They love making the masks, and we all love investigating all of the nooks and crannies in the countries.

I can't speak to your breakfast question, but I, too have heard that MGM and AK are half-day parks. We went for a week last year, and had thought about doing one or both as a half day.
As others have said, it really depends on what you want to do.
My DH took 2 of our kids late one afternoon to AK for the parade and the Festival of the Lion King. That was about all they did. The next day, we went for early EMH to AK. We only stayed til about 1:00, because we had plans for later in the day, but could have easily stayed a couple more hours (it was blazing HOT that day, but I would have loved to have stayed!). Between using fastpass and visiting less popular attractions w/ shorter lines, we kept busy all day (also did other non-ride things in between...drummers, etc.) We didn't get to do everything we wanted. For us, a definite more than half-day park!
We had a less than stellar day at MGM, simply because we went early in the morning on a late EMH day -- some of the major shows were not playing in the morning, since they were staying open late. So we didn't get to see all that we wanted to, and had to stay longer than we'd planned to see some things (we had alotted a half day). It was the only day of our trip that we felt like we were standing around a lot waiting for shows and characters (who sometimes left right before we got to the front of the line) -- the rest of the week, we were able to use Fastpasses and keep moving. So for us, it was more than a half day park, but not in a positive way -- I'm not sure we'll even go back on our 4-day trip in November.
Just our expereience, maybe a place with mostly shows is just not for my family.

I just wanted to pipe in with a couple of things... Joey loves AK, but we normally only are there until early afternoon. I've yet to see the Jungle Jam parade, even though I've wanted to stay and see it each of our two visits... maybe this next time...
MGM was OK, but not that big of a hit for Joey... he loved seeing some of the characters there that we didn't see anywhere else (Power Rangers, Sully), but we just didn't think there was much there...
But, I have to seriously chime in for Epcot here... I would have to say that it is Joey's favorite park. He loves the different countries and The Living Seas, seeing all of the fish... Mission Space (the tamer version) is a huge hit with him and his love of space... he loved Test Track too... and there is a fire truck in Innovations that you know Joey just adores... Soarin' is another fave of his... I can't remember if you're getting park hoppers or not for your trip, but I would encourage you to give Epcot a chance... Joey loved it the first time we went when he was 4 and loved it even more this past year!

Hey Julie, we've never been able to make the JJ parade at AK either, not even when DH and I went by ourselves earlier this month! It was cooolllldd that day, so the heat wasn't the reason that time. I've come up with a way for us to see it, I don't know at all that it would work for you, but I'll throw it out there. We're arriving around noon on a Friday afternoon. We're going to check in, unpack if our room is ready, eat lunch, then head over to AK. We're going with the one goal of seeing the parade. OK, I'd like to fit the new Nemo show in too, we missed it too, but the parade is the reason to go out there that day.
