Can't decide which park to take SIL

I wanted to see if you ladies could help me make a final decision on which park to take my sister-in-law to as I can't decide and DH is no help. SIL just says she will go whereever I want to go. She is coming for Detroit next month for a few days. Since she will be here for DD birthday, I already had Disney reservations for 1 night at the Shades of Green. Our reservations are for March 17-18. Our annual passes expire March 17th so this will all be our last trip for a long time. The 18th we will just go to Downtown Disney where you don't need a park pass.
So we took her to Magic Kingdom last time when she came with her grandson, that is out.
I was thinking of Animal Kingdom, but we went there in mid-Jan and DH decided we should not bring her there, so that is out.
So either MGM or Epcot are the choices. I am also wondering if we should just get her a Park Hopper and switch marks mid-afternoon? I don't want to be rushing around so perhaps two parks will be too much?
Which evening show, Fantasim or Epcot Fireworks? Another thought crossed my mind on the monorail yesterday while passing the Polynesian was to take her to the Luau? But I think that would mean missing any other evening show? I haven't called the Polynesian to see if we could make reservations yet because I am so undecided on what to do. I want to do something she will like. The kids will like anything we do.
She is a bit on the heavy side so I don't want to walk her to death like we did last time at the Magic Kingdom. It was only our second time to Magic Kingdom so we were still trying to see and do everything. Now, I would not try to do everything in a day, just pick some things I think she would like.
She doesn't do the thrill rides, etc. At Magic Kindom she just did the rides like peter pan, small world, etc.
I am thinking Epcot, DH was thinking MGM? But for the evening show, I was thinking Fantasim because you can sit down. The kids did just see this a few weeks ago. DH thinks Epcot fireworks are the best. I haven't ruled out the luau either, but am doubtful they have reservations left.
