Do you know if you can charge meals at all restaurants and shops around Disney World or is it just select places? I'd love not to have to carry around cards and lots of money but I don't wan't to be limited in where we can purchase things either.

When you check in they will ask you if you want charging privelages (sp?) on your key card, if you do you can use it pretty much anywhere to shop or dine and it will be charged to your room.
I like it because it means that if you want to you can take only that one card and leave other credit cards safely hidden away.

Yes. The room card is accepted everywhere that takes credit or dining plan (which are on the room cards if you have a dining package) There are very very very few places that are cash only, and those are kiosks. so if you're at a kiosk and are unsure, look for the purple DDP icon. If that's there then you can use your room key. You can not use your room key at non disney owned locations outside of parks & resorts. (ex you CAN use it at non disney restaurants in Epcot but not at Rainforest outside of AK, or the lego store at Down Town Disney)
I love having charging privilages on my room key. It makes things simple. You can ask each day for a detailed charge sheet if you want, or you can just wait till the end and view your charge sheet.
We've done that many times and it always works out great.
