Counter service in parks?

We don't usually eat counter service in the parks, what is good? We're going to have the dining plan, and last year we had so many counter service meals leftover that we didn't use. One problem is that we aren't burgers and chicken strips people; even the kids don't eat many chicken strips/nuggets/whatever you want to shape them into, lol. We did eat at Tusker House at AK, and that was right up our alley. We aren't too picky and like veggies with our meals, not fries.

Anything similar at the other parks?

Thanks!

This is the first trip that we really tried several counter-service places around the world for light lunches or late breakfasts. In the past, we've had usually had lunch at Casey's Corner in MK on Main Street which specializes in hot dogs (and yummy corn dogs).
