I don't think you can see fireworks from downtown disney, but you *might* be able to see Epcot's fireworks from boardwalk. We watched them from the Yacht Club one night, which is across the river/lake from Boardwalk. They certainly aren't as good as seeing them from in the park, and you miss the whole illuminations globe and story and everything, but it was freezing cold and windy and we were not about to go stand in a crowd to watch a fireworks show we'd seen 2 years earlier, lol.
However, with that being said, all of the fireworks shows are going to be worth the experience of going into the park and watching them. The music and the stories are a huge part of the show, and you won't get that from watching from anywhere but right in the park. If you're trying to schedule in time to see fireworks, and you'll only have time for one, here's some info that might help:
1) Wishes (MK) - this is the most family friendly fireworks show, and it's AWESOME to watch the fireworks over the castle and to hear the music and story. We have the sountrack CD and listen to it ALL the time (it's addictive, lol!)
2) Fantasmic (MGM) - might be a little scary for littler ones because there's a lot of villain stuff in it, however, IMO this is THE BEST finale show at WDW. Every time we go we make sure we have carved out time to see this show. The effects of the images projected on the water are awesome, and the story is cool, too. Also, it has live characters, and lots of them (this is the only one with live characters except Tink is in Wishes for about 15 seconds, lol.) Oh, one note, for this one, you have to go to a special viewing area, you can't see it from the rest of the park. It's like an ampitheatre. And I would highly reccommend lining up EARLY for it. Find out from the times guide what time seating starts (usually 90 minutes before the show) and get there at least that early, maybe even earlier. This last trip, we lined up about 30 minutes before seating started and had our pick of seats. But the ampitheatre fills up fast and once the seats are full, they don't allow anyone else - there is no standing allowed, you have to have a seat or you're out of luck.
3) Illuminations (Epcot) - this one is all about the creation and evolution of the earth. For me, as a children's pastor who teaches creationism, I got very irritated by this one because it's presented in a matter of fact way ("this is how it was", not "this is how it might have been".) However, if you don't have strong feelings about evolution vs. creationism, it is a good fireworks show, and the special effects are really cool.

*I* haven't been in DQ but my husband says "No way, it's too loud and crowded and there's nothing for them to do", my 8 yo who's been 3 times says "well there's not much for them to do but they can have fun watching and maybe sitting in a parents lap, but they have to like video games"
We have seen the very highest Illuminations fireworks from Downtown Disney while sitting at a table near the lagoon enjoying Gheradeli's ice cream, but it was a very clear summer night and a total surprise. I wouldn't really call it 'watching' the show though, lol.
I think what we will do then is have different parents night out for DQ.
