My family would do Epcot over AK. We went with my bil's family and so we had 4 kids and none of them were that crazy about AK. In fact we only spent about 3 hours there. We just weren't into the animals. The only thing we really did enjoy there was the Finding Nemo show.
Everyone in my family would vote for Epcot over Animal Kingdom. We LOVE Epcot - not so much Animal Kingdom. That makes me biased. :)
You really can't go wrong either way. Animal Kingdom closes so darned early though, you'll get more for your money if you visit Epcot. I like the Epcot nighttime show, too.

Not to throw you off, but with the ages of your kids I'd skip Disney Studios. Only your 12 yo has enough to do there. The little ones only have shows and character greetings. That's really asking a lot of a 1 & 2 yo to sit down in the stroller or in a show all day. (I have an 8 yo and a 2 yo and 3 yo that are 11 mo apart).
I personally have a very difficult time choosing between Epcot and AK. For my family, here are
Epcot hands down.
I have to agree with Sonya about MGM.
I would definitely choose Epcot over AK. All 4 of us (me, DH, DS6 at least, DS3 doesn't care) love Epcot. We usually spend 2 full days there, and only from opening until about 1 to at AK. There are things we like at AK, but not enough for a full day.
I do agree with Sonya, I'd skip MGM, but my kids aren't big enough for any of the thrill rides, and neither am I.

As far as choosing between Epcot and AK, that's a tough one for our family.

LOL...Sonya, I was so hoping someone would initiate that so I could just piggyback....lol.
I agree with Sonya, if I had to choose 3 parks and could ONLY do one per day, I'd skip MGM/Disney Studios. There is just NOT enough to spend a whole day doing there. Especially with the range of ages you are taking.
You mentioned the cast members from different countries at Epcot, but there are also cast members from Africa & Asia in their respective "lands" at AK which is so cool--especially for animal/nature lovers.
I'm jealous about Jiminy Cricket, though...we never saw him.
Epcot would be our choice over AK, though.
