Planning a Disney trip with my husband and Daughers 7 & 13 - if our 19 year old Son decides to come along what's the best way for a family of 5 to stay?

You're visiting Disney World in Florida?
Here's what we're doing: we're going with our 3 dd's ages 22, 20 and 15, and the 22yo's bf who will be 21 when we travel.
We're staying at Star Island resort, about 10 minutes from the DW maingate. Part of why we picked there is because it's part of our timeshare exchange program and we only have to pay a $138 fee to swap our home week (which is in August at a PA resort) for the December week in Florida. (We're renting a minivan for the week.)
We will have a 2-bedroom suite: a completely separate, private bedroom for dh & myself, another separate, private bedroom for the middle & younger dd's, and a sofabed in the living room for the oldest & her bf (or perhaps the kids will swap that set-up midweek). There's also another sofa someone can use if the want to be alone (but I don't think it's a pull-out). We'll have a full kitchen for a few meals, plus the great perk of a washer/ dryer so we don't have to pack so much (except for the girls and their shoes kwim LOL?).
HTH.

You can do connecting rooms at a value resort (or any resort for that matter), a Family Suite at the All Star Music (how tall is your son? he may not fit well on a pull out) or 5 will fit in one place at
Port Orleans Riverside - 7 yo can sleep on the trundle
Fort Wilderness Cabins - our personal favorite
Almost any Deluxe resort
DVC properties.
