Please don't go without the reservations... Chef Mickey's in in the Contemporary hotel and is often fully reserved. If you're staying on site, you can make your reservations now by calling Disney dining, which I recommend that you do. Be flexible with your timing to help you squeeze in...
If you can't get a reservation (ADR in Disney speak) there, Crystal Palace Breakfast with Pooh and Friends is wonderful--that's in the Magic Kingdom... or there is an Ohana Breakfast at the Polynesian with Stitch and Mickey and maybe some others (again, with the ADR)...
Personally, I like having late breakfasts--they seem to be a touch easier to get the ADR with and then you are full until mid afternoon...

YES,YES, YES!!!!! You must make reservations for meals. And since you are really pretty close to your travel dates, you need to make them NOW.
The Disney Dining Plan is VERY popular and that has caused meals to book up 180 days in advance(that is the earliest you can make reservations for your trip).
If you go to allearsnet.com they have lists of all of the restaurants and their menus to help you decide.
As said before Chef Mickey's, Crystal Palace are good Character meals. There are "princess" based meals at the castle (Cinderella's Royal Table), Norway @epcot and at the Grand Floridian (1900 Park Fare). O'hana is at the Polynesian and the only character meal there is breakfast. There is also a breakfast & lunch at Hollywood & Vine at MGM that features Playhouse Disney characters.
Keep in mind that if you pick a meal that in a park, you have to use park admission to get in. If you don't have park hoppers, you will need go plan accordingly to do that park that day then.
Good luck driving. It would be 24 hours for us to get there & I have found air fare to be nice and cheap vs. driving and stopping.

When are the actual dates you are going in May? If you are going during the beginning of May, the crowds will be lighter compared to the time leading up until Memorial Day. I would plan two days at Magic Kingdom, so you can take your time and use EMH if you get the chance.
And YES, make dining reservations, you will not want to wait around with kids for a table. We like Crystal Palace for lunch, but I also heard it is great for breakfast too.

We are going May 13-18 so it is probably going to start getting busy then.
First, I don't think that those dates will be that busy.

We're going in May also! We're going Memorial Day weekend and the week following. You will definitely need an ADR to get into a character meal. DH and I just got back last night, and everyone we saw trying to walk into a restaurant (not even a character meal) was either turned away or given a ridiculous wait time, like 2 hours. Chef Mickey's has become one of the most popular character meals, and is hard to get an ADR for at certain times, even if you call ahead. I doubt you'll be able to just walk up. I would go ahead and make the ADR now, and maybe not tell your DH if he won't like it. You can always cancel if the time doesn't work out, but at least you'll have it.
