Congrats on booking, it's so exciting, isn't it??? We've never been there in late October, so I can't comment on that. We were there in early October one year and it was hot, upper 80's, etc. I would probably throw in a pair of jeans and a light jacket just in case, but hopefully someone will be able to help you more with that.
If they offer the free dining again this year, there will be a code to use. You just call back and ask them to apply the code to your reservation. Most of the time, this can be done, just make sure you call as soon as you find out about it, there is a limited number of rooms for each resort that can be booked with the discount.
Are you going to a park the day you arrive? If you are, you can eat in the park you're in, at any of the WDW resorts (no admission required, and you can use WDW transportation to get there) or at Downtown Disney. If you don't have a park ticket at all for that day, you can still eat at any of the resorts or DTD.
Most of the character meals are only 1 table service credit each. The exception is Cinderella's Royal Table, that uses 2 credits and is not worth it, in my opinion. We loved it before they changed it, but we won't go back the way it is now.
You can make ADRs for your entire group at the same time, when they ask how many people, just give them the total number and it won't make a difference.
