I don't have specific tips, other than USE FASTPASS! :) But if you have any questions or specific areas you want tips on, I'm happy to help.

Have a WONDERFUL trip! (We'll be in Orlando while you are, just for a day or two, but I don't think we're going to any Disney parks this trip. Bummer!)

Enjoy your trip! Have you ever been before?
There is no gum for sale on WDW property so if you like it, bring it! (MCO does not have any , either, not sure about Sanford)

Do you not have any other dining ADRs? I would check online/ call NOW and if you can't find anything then check with your grand gathering person or Concierge when you check in.

What kind of food do you like? DO you have hopper passes? What does your itinerary look like?

I agree with both of the PPs - if you don't have any other ADRs set up, I would contact your Grand Gathering person to get some. Unless you're all not planning to eat together all the time. With the Deluxe Dining plan I believe you get 2 Table-service credits per day and as you're paying for that ahead of time, you want to make sure that you get what you pay for :)
Yes, FastPass is a wonderful thing. You may encounter some crowds due to early spring-breakers so for any super-popular attractions, use FastPass and if you can, take advantage of either early or late Extra Magic Hours since you're staying on property. Especially with older kids, you'll probably be able to stay out later and you can enjoy lots of attractions in the evenings with less crowds than during the day.

As for as flying, if any of you have difficulty with ear pain, you can buy EarPlanes - little pressure reliever ear plugs that you put in during take-off and landing. Found out my little one's ears are super sensitive so I always bring a pair for her (you can get them in your loca drug store/pharmacy).
If you haven't flown in a while, make sure you're aware of all the regulations in effect: http://www.tsa.gov/travelers/index.shtm . Allow enough time to get through security at both airports (going/coming) - depending on how busy your airport is or the time of day, you might spend a lot of time in line before you even get to the gate. Better to be there early then running late.
Also most airlines require that you pay for any luggage that you are checking so be prepared for that.
We have a towncar service pick us up from the airport too (Orlando Int'l, though) and it really is a nice thing to have someone waiting just for you and your family :)
If you have any specific questions, post them. Otherwise, have a safe and magical trip!

if it were me, I would drop the hopper option AND drop to the basic dining plan, but I am not sure you can do that this late int he game. The Basic dining plan gets your one table service, one counter service and one snack per night per person. THe amount you save could go for extra food if you need it.

If you ate flying then a birth certificate for everyone under 18 is all you will need. If you are driving, you can still bring one just in case, but it will not be needed.

Also: if you ate arriving that late at Hollywood Studios, know now thT you will not get to ride the big 3 rude without a wait. Fast passes should still be available for ToT and possibly RnRC but will be long gone for TSMM. (Tower of Terror, Rock N roller coaster, Toy Dtory Midway Mania). Be sure to grab a times guide on the way in to see if there are any shows that you can catch. Actually grabbing a times guide is key at any park!
