Okay, I bought my guide book, and it's so far very helpful.
Here's my idea for planning what to see, what not to miss.

It sounds like your idea will work.
We didn't have a set time itinerary but we had a general one of "go to this ride first" --

We went with our kids for the first time when they were 2 and 5 so I couldn't have a "set in stone" agenda.
My first couple trips with Aly (she's been 5 times), I made an actual plan, planning ride/show times, wait times, lunch, breaks, etc, JUST to see what was doable. I actually had an agenda--this, this, this, this. I never planned to stick to it (and we didn't), I just wanted to see what was doable. I found this to help with a few things: it helped me from expecting to do too much, it "planted" the idea of doing things together so that we were not criss-crossing the parks, and it made me feel pro-active in planning.

We'll use a half-baked itinerary...similar to yours in that we'll list the things we most want to see in each area of the park, and will make notes about which things are fastpass and what are the best times to do certain things. We'll probably be splitting up a bit, since our 2-yo isn't big enough to ride all of the stuff the 6-and-9-yos will ride. So at least I'll have in mind a few things that he'll enjoy nearby wherever the older ones go.

Index cards do sound like a good idea! How long are you going for as I may have to think about putting things down on index cards as well so I have an idea of what we want to do at each park I also don't want to miss the best things that there is to see. I realize that sometimes your plans can get messed up but it would at least let me know what there is and I can also check off what we have done and seen

I'm LOL, forever_amber, about your son riding Buzz Lightyear 20 times in a row...and you didn't plan for that. That's one place where the index cards would come in handy...after doing that, you could identify your other "must do" attractions to see which fit in your remaining time.
I'm still figuring out, for our trip this July, which park(s) we will do each day. I know we won't have a terribly ambitious schedule, since we'll be w/ Grandma and Grandpa sometimes, and because our family tends to crumple in heat. There's no way we can do it all, so I think flexibility (when the kids want to repeat something 20 times) and the ability to forget certain things exist will be key for my sanity. For example, I just decided not to plan a day at MGM, and I felt a HUGE weight come off my shoulders. Aaaaah! Not to say that we won't go there (we'll have an entire day at the end of the week unplanned, to go there or back to another park), but I'm getting a psychological lift from forgetting about it.
Maybe I'll have a blank index card in my pack labelled "Save for Next Trip". That way, we'll have a list of fun things to look forward to in a future year, and we can think about them in a positive way, vs. feeling like we missed out on them.

I haven't read the other replies, so I may be repeating something, sorry!
I don't do a step by step itinerary. We eat one sit-down meal each day, and we're in that park for that half of the day; if it's breakfast, we stay until lunchtime or so; if it's dinner, we usually eat early and spend the evening there. Sometimes we park hop in between, sometimes we go to the same park twice in one day. I decide where/when we want to eat our sit-down meal each day and go from there. I have a list (kept in the room, lol) of what things we want to see or do at each park. I know that we'll be (for example) eating at Crystal Palace at MK on Thursday at 8:05 am. We'll be inside and finished with breakfast when the park opens, and we head for Dumbo first. Then on to whatever else we want to do in Fantasyland, which is everything except Snow White. From there, we just go on to whatever we want to do next. When we go back to our room for our break/nap after lunch, check the list for wherever we're going that afternoon and get a mental idea of what to do. By the end of our trip, we've done pretty much what we wanted to.
Does that make any sense at all? It really works well for us.
