My dh, SIL and I booked tickets to see Cirque de Soleil on a Sat night, 6pm (while the IL's stay at the resort with 2 and 5yo ;).

Rainforest Cafe is in the DD area, but there are many more "adult" restaurants you can enjoy without the kids. We like Fultons for seafood, there is a lovely Italian restaurant, House of Blues, and there is Planet Hollywood. Many other choices, too! Here's a list from the Disney site:

I'd guess about half an hour to get there from the value resorts, give or take.
There is plenty to keep a young child busy in DD. My kids have always loved it. There is a Lego center with thousands of Legos in bins and a car run. A Mr. Potato Head center. The kids can play in the water fountains. And of course.....all of the cool toy and candy stores! We usually spend half a day there.

Like Laurie said, there are many other restaurants that I'd go to if I didn't have the kids.
Should I do an ADR for Fulton's?? I'm thinking we should. We're thinking about going after Cirque de Soleil and I will need to eat right afterwards (I'll be 16 weeks pg then). What is a good time
I am thinking no earlier than 8 for your ADR. It has been a while since I went to Downtown though (8 yrs, lol). So, someone else may have better info for you.
I checked a previous post about the sunset and on May 10 it is listed at 8:06. So, probably between 8:10 and 8:20 for the time you are there.
