I am trying to make a list of things to skip at Epcot. We have a 7 and 3 year-old, both boys. This is a list of things I am not too sure about.
(I have been several times, but have either forgotten about these are have never done them.)
Turtle Talk ( I don't think I can skip this one)
Journey into imagination with Figment (I don't think I have ever done this one.)
Honey I shrank the audience
Circle of life
Ellen's energy adventure (is this a ride?)
Cranium command
The living seas (fish tank??)
We love Epcot and this is a list of some questionable things. Thanks in advance.

Since Cranium Command is seasonal, that will be easy to take off your list.
If your kids are Nemo fans, I would definitely not skip Turtle Talk or Living Seas. Living Seas has been re-themed with Nemo and Friends. You get into a clam-shell and ride through the preliminary tanks joined by Nemo....it's very clever....much better than the old elevator "ride" they had! Journey into Imaginiation is cute, too...my girls (6 and 3 at the time) seemed to like that one. The others, in my opinion, all fall into the "if we have time and nothing better to do" category.

We think that Turtle Talk is a MUST!
Our only Epcot "Must DO" is Soarin!
IMO, you need to see Turtle Talk. While you are in the Living Seas, look around at the fish, and go on the Nemo ride.
My boys LOVE Ellen's Energy Adventure. They've always liked it, even at a young age. Beware though, that it is dark, and there are dinosaurs all around. It can be scary for little ones if they are easily spooked.
Most likely, Cranium Command won't be open. It's in the Wonders of Life pavillion, which hasn't been open on our last few trips.
My kids like the Figment ride...the tune is catchy, and the interactive stuff at the end of the ride is fun.
The other stuff is probably skippable. My kids both hated Honey I shrunk the Audience...way too creepy for them!
