Well, it wouldn't be a schedule that we would be able to do but I guess if you're only trying to hit a few rides, maybe?

I am one of those people that plan to the hilt to cram as much in as possible. I took my in laws who haven't been in forever, my family, husband, and 3 month DS in December. If I can get nine people out the door in the morning, on most of the rides together, and eating at a reasonable time, and still not miss anything, you can certainly do this schedule. Couple of notes:

Are you staying on property? If so, plan your days according to the extra hours. The one hour in the morning and two or three hours at night are great.

Use the fastpasses to your advantage. Get a fastpass for one ride and wait in line for another ride. By the time you are off the first, you can fastpass it in the other. I went in December and didn't have to use this often. I've been in July and it was a must.

Definitely a whole day in Epcot. You can always split the front part and the World Showcase up. Remember, the World Showcase is open later than the front at times...however, the later it gets, the busier the showcase is.

I am ok with a half day in Animal Kingdom and half day in MGM.

Definitely a whole day in Magic Kingdom.

Mini golf and pool - If you want to do mini golf, you may have to leave early and miss the fireworks. I never miss the fireworks, they are my favorite, and I cry every time. Although beautiful, I never have time for the pool either.

Downtown Disney - Great for shopping and eating or a night out. You can get most of your souvenir shopping done there. With this in mind, if you can't resist shopping in the parks, you may want to save DTD for last and pick up the remaining of your souvenirs. Some people would suggest DTD on Sunday so you don't need a ticket to the parks for a half day, however, if the difference between a three day and four day park hopper is $8, go for the parks. You can get in some rides, a nice dinner, and... the fireworks.
