Which would you choose?

We want to go with the least amount of crowds, but with the most amount of park time.
Our choices are:
Thanksgiving week: we can go to parks Sat before, Sun, Mon, Tues, and possibly Wed (4 days, possibly a 5th if we go the day before Thanksgiving which will be busy)
First week of Jan: we can go to parks possibly Jan 1, Jan 2, Jan 3, Jan 4, Jan 5 (4 days, possibly a 5th if we go on Jan 1)
Mardi Gras: we can go to parks Sat-Feb 2, Sun-Feb 3, Mon-Feb 4 (only 3 days, but I know it will be uncrowded)

Dh and I went the week of MLK. I arrived on a Thursday. He arrived on Sunday. It wasn't horribly crowded. I did not enjoy however the limited hours............We are used to/spoiled by the Summer extended hours......

We actually prefer the limited hours because it means a slower time..lol. And we don't leave mid-afternoon for a break, so we don't want to stay out too too late.
Unfortunately, we won't be able to go the week of MLK, so I was just hoping we'd miss some of the Christmas/New Year's crowds. (It's looking like that won't be the case.)

A Seasonal Pass entitles you to admission** to Magic Kingdom® Theme Park Except the following dates:
Darnit...that's basically saying they are "expecting" it to be busy until the 5th...which would be our last park day.

My industry has it's national convention at WDW every other year from 2/1 - 2/6.
