All right everyone... I am here planning our first trip and am so confused and lost... There is so much to take in.

How exciting! I love making my Disney trip spreadsheet each year.
My only comment is to be sure and have another spreadsheet (or add to this one) that shows the opening and closing time for each park as well as the parade times and such.....just in case you have to change up your trip because of weather or something else that pops up. Otherwise, your schedule seems very do-able to me. And fun! I'm jealous.
I'd share my basic sheet, but I can't post an attachment here. It's nice to have, and I include important phone numbers and confirmation numbers, too. I print up a bunch, and it's very helpful.
As for CS.....we like the Electric Umbrella and Morocco in Epcot, Backlot Express in MGM, Cosmic Rays in MK (SO many different choices as you walk around the large counter area), and Restaurantosaurus in AK. We're going for quick and plenty of options, and the kids like these....but there are still plenty of options for DH and me.

I am working on our backup computer right now because the hard drive to our main one died in a storm this week. We don't have Excel on this computer and I cannot open your file. I will try to look when we get our other one fixed which should be tonight.
Would your mom and her DH be willing to do some stuff on their own? It might make those days you mentioned a little less hectic for you and your family. I can't remember the ages of your kids though so it might not be a big deal. I know trying to squeeze that many parks in just 2.5 days would be rough for my family. You might could do stuff with them in the morning then let them go off on their own for the evening or visa versa.
As far as counter service places go, first of all check out the menus on Allearsnet.com. I haven't eaten at a lot of them but my family likes Cosmic Ray's in MK. It has a big variety of foods, but if your family all wanted different things, you'd have to stand in different lines. The portions are pretty big, I got the turkey bacon wrap once and it was way too much for one person. Tusker house in AK was really good, again, portions here are pretty big. We ate at the ABC Commissary but I didn't care for it. I have read good things about the Mexican CS place in Epcot and plan on trying it out later this month.
You should get one TS per person for each night you stay (example 7 ts for 7 night stay). I believe that HDDR is actually 2 ts credits. So, if you pay out of pocket for that meal, your ts credits will not be affected by that meal at all.
