Hey Ladies,

It's the holiday weekend and some of us LOVE to cook. So whatcha cookin'? For Who? What's your recipe?

For those of you who DON'T love to cook. What's your favorite take-out?

Well, I'm Monica (from Friends) the entertainer. I LOVE to entertain. So my weekend is full of cooking. I love it. It's not always fabulous, but it's fun. Tonight I'm preparing fajitas (chicken and shrimp) for DH and friend for the poker run they'll do tomorrow night. So I'm doing a homemade tequila lime marinade for the meat and a spicy marinade for the veggies. Then I'll make my homemade pico de gallo- everybody loves it. I don't eat it, but I hear it's good. I'll spice up some sour cream and get it packed and ready to go.

Sunday I'm doing marinaded beer butt chickens on the grill and homemade potato salad and baked beans. You know, the bbq staples. Simple and easy. We'll have the neighbors over for food and fire and it will be nice and relaxing.

Monday I'm doing homemade pasta sauce. I grill a variety of veggies with olive oil and salt and pepper and then chop in the food processor. I add spices and fresh parsley and serve over pasta- it's yummy. Then salad and awesome garlic bread.

Not sure what I'll do for dessert any of these days, but I love to make this white chocolate raspberry trifle. And it's always a hit! Easy, easy, easy.

Sure come on over! It's only like a 8 hour drive from Omaha to Mankato- not bad actually! I'll cook you whatever you want. Have a great weekend! Sounds like you are going to be having a lot of fun!!!

DH and I go every year. We missed 2001,2002, but have gone since. I love it. We usually go really early a.m. on a weekday. I'm the typical 4H nerd. I grew up on a farm in Northwestern MN- only 60- miles from Canada-ay- and went to the state fair for the first time when I was 16 (with my pig)-blush. We've been going since about 1994. I'm just smitten. Have fun!

Since we have little money, our Memorial Day Weekend was pretty boring. Memorial Day evening we had Campbell's tomato soup and grilled cheese sandwiches. Sunday night was probably the highlight of our evening. Dh marinated some chicken breasts (boneless, skinless) in our favorite marinade (teriyaki sauce and Frank's red hot sauce with a little salt and pepper) and grilled them, and I made mashed potatoes (from potato flakes), and mushroom gravy (Campbell's cream of mushroom soup with half a can of milk), and heated up a can of corn. Saturday, we boiled some hot dogs and dh, Ethan, and I ate ours with some Cincinatti style chili (from a can), and we had some canned pears along with it. And I can't remember for the life of me what we ate Friday night, so it must not have been very spectacular. Tonight I'm making a cheesy tuna noodle casserole a la tuna helper. lol.

Jayme,

The most important of all of your meals is that you eat them with your very happy family. I would rather have hotdogs with my kiddles than beer butt chicken with the neighbors! :-) I love tuna noodle casserole- I should make that tonight! Thanks for the ideas!! WITH PEAS!!!
