Goodbye Jack-o-Lanterns, Hello Pumpkin Pies!

I decided this year to use those pumpkins and make some pies. I haven't done this in YEARS. They look good...let's just hope they taste good.LOL

LOL Judy. I think some folks believe you either can't or shouldn't use jackolantern pumpkins for pie, but they've always worked for me. They also taste better than canned. Sadly, I am lousy at piecrusts so those are always purchased.Â

It's easy. There are tons of recipes online, but I simply cook (boil or bake) enough of the raw pumpkin to make about 4 cups. Mash by hand like potatoes. It resembles cooked yams.LOL I just add a 12 ounce can of evaporated milk, half a tsp. of vanilla extract, one and a half cups of sugar (not carved in stone)...4 slightly beaten eggs and then at least a tsp each of cinnamon, nutmeg and ginger. As with the sugar the spices are adjustable to your taste. You can either make your own crusts or I bought 2 deep dish crusts. I filled them with the pumpkin mixture...baked on 425 for 15 minutes then 350 until a knife comes out clean.
You can peel the skin before or after cooking. If you boil it in chunks...I'd suggest "before"...if you cut one in half and bake in the oven..."after" will work ok. :)
I'm doing it that way next time. Boiling is just to time consuming.
