As a spin off on my cooking for the month thread, what meals do you like to make a freeze?

I have found that most chicken meals freeze well. I tend to freeze chicken devon and chicken soup a lot.

Sausage does well too so I freeze sausage and peppers, spinach pie (which is made with sausage, and just grilled sausage to throw into sauce, rice, etc.

There are certain beef things that freeze well and some that doesn't. Is it just me or do you all have issues with beef meals you freeze being prone to drying out? Any way, chili, stews, and meatballs/meatloaf seems to work out ok.

Some ham, in my experience doesn't freeze well at all. I wonder why, b/c I can make bacon and freeze it. Maybe it is the water content? B/c the ham I get at the butchers freezes fine b/c other hams taste funky when I freeze it.

Pasta dishes freeze well, but like I said in the other thread, I don't make much pasta any more. Most of us have issues with lactose, so anything with cheese is right out, and Nina has decided that pasta is "nasty." Gotta love fussy preschoolers. lol

I can't wait to see what you all freeze. I am hoping for some new ideas. I really need to try making more meals and freezing them. By the time I get done school, I really cannot think any more. So I have to prep stuff the night before, and get it cooking before lunch. I'd be so nice to just pull a good meal out of the freezer most days.

I like to make up two smaller pans of lasagne instead of one large pan. I bake one right away and freeze the second. It always turns out just as good as the pan we make right away.

The only thing I really have been freezing this year is cooked ground beef and meatballs.

The major ones I freeze are spaghetti sauces, chili and soup. I also make a lazy cabbage casserole and freeze that.

I freeze a tater tot casserole ( tater tots, ground beef, cream of mushroom soup, cheese and fried onions on top ), that does really well.
