Favorite summer foods/meals

I'm curious what you all are cooking this summer??? It seems each season brings with it different recipes and meal ideas.


Currently, I'm awaiting the arrival of fresh veggies from my garden. I did pick two zucchini the other day and will probably make some zucchini bread this weekend. I also have some yellow crook neck squash that should be ready to pick today. And, of course, I'm impatiently waiting for more tomatoes to ripen; I've had one so far. I eat them just cut up with salt and pepper or sliced and put on toast... I can make a meal out of toast and tomatoes!!!


I love to grill zucchini and yellow squash along with whatever meat I'm grilling for our meal. I slice both the long way, brush on some olive oil and season, and place on the grill for maybe 15 minutes, turning a few times. It's my favorite veggie by far in the summer!


Lately, one of my favorite easy meals to do on the grill is marinated chicken legs and baked potatoes. There's nothing better than baking potatoes on the grill. :O) I try to grill a lot in the summer because we don't do it at all in the winter, plus it keeps the heat out of the kitchen.


This time of year, I always like cold pasta salads, too, but unfortunately DH doesn't like them so I don't make them often.


Oh and sweet corn... haven't had any yet but am looking forward to it!

I grill year round - often doing turkey breast in the winter, etc.

My Mom hates curry and loves this dip. The flavor is really mild and, the longer it sits, the prettier it gets. I'd say it needs to be made 1 day ahead to be pretty. My super picky coworkers also like this recipe. I don't like horseradish and I like this dip-lol.
