Love quinoa, sure wish my family would.  I saw a really good recipe in the Swim magazine not too long ago and just have not been able to put it together...it had cranberries in it.  Gosh, will have to find it!  Yum.

I buy them from Whole Foods just ready to put in the salad. Otherwise I would buy frozen and then thaw.

Now you 2 have me thinking about trying something like that. 

Becca's a little more willing to try new kinds of foods than Kristen is. With just the 3 of us now- I'd like to branch out and try something different- and healthier.

Do you cook the edamame ahead of time also or so you eat it in its raw state?

Sounds awesome! I am definitely going to try it this weekend. Jordyn asked the friend who is over if she could stay over at her house when I told her I had found 2 new recipes, one for swordfish burgers and one for turkey burgers (with zucchini, but I didn't tell her that). I reminded her if she wanted her sausage pasta dish for back to school night diviner, she'd be home this weekend. lOL! I am not above bribing at this point in life.

The quinoa is cold. I put it in the fridge overnight and add the ingredients in the morning. It's a Whole Foods deli knock off. I bought it a couple of times and then worked on recreating it.

Heather, the coconut, mango, almonds and edamame sounds pretty good. Is the quinoa cold when you add those or warm? I'm not a dressing fan, so salads in general tend to be dry for me anyways. That combo sounds like it could be something that eouldn't work for a workday lunch.

I pretty much use it to make cold salads like Ann described or I add in some drained black beans, corn, and diced bell peppers or I add mango, coconut, slivered almonds and fresh endamame. I seldom use dressings. DH is not a fan, but DS and I like them for lunch on a base of lettuce.
